Will do in a pinch - Edit
The caponata if you’re unaware is just a cold plate of onions and peppers in a tomato sauce. The chickpea and spinach was brought lukewarm and tasted like well, chickpeas and spinach. Bread was nice and fresh but for a vegan this place is not worth the wait and cost. Maybe other vegan items on the menu but very underwhelmed personally and wouldn’t go back.

Amazing Tapas in RiNo! - Edit
The service here is always incredible! They are very accommodating to dietary restrictions and will even mark up the menu to identify which dishes are vegan. My favorites are the mushroom dish and spinach and chickpea cazuela, they go great with the complimentary bread!
