Grilled veggie combo that can be added is good- broccoli, carrots onions & peppers. The rice was undercooked and the beans were sort of bland. The ancho sauce on the burrito was good. They charged me $3 additional to add the veggies to the burrito.

Tasty food and knowledgeable staff. Explicit vegan menu options are few, though most dishes can be made vegan with alterations. Let them know your dietary restrictions and they will make the process of picking out your dish easy. Rice and beans are cooked without any sort of animal broth, so everything except obvious meat or dairy is fair game. I enjoyed the arroz con pollo dish, though I substituted the "pollo" for soyrizo, opted out of any dairy, and added chipotle sauce.

Ordered the “Vegan TJ T’s” and enjoyed them. The spice level was just right with the vegan soyrizo inside. Would love to see more vegan options listed outright on the menu, rather than having to make adjustments (which can be done and will be accommodated). A rice and bean bowl, perhaps? Good beer selection too. Looks closed when you first walk up but it’s just dark inside😉

We had a good meal along with our toddler - they were able to modify almost everything on the menu to be vegan and a lot of it to be gluten free as well. We had tacos with soy-rizo, good guac, lettuce, tomato and rice. And spicy tacos with all of that plus beans and hot sauce. We also had chips that came with fresh salsa and a good ruby margahrita. My 2yr old loved the spicy hot sauce!

Filling Meals for Hungry Hikers - Edit
We were staying just outside Waynesboro and found that The Baja Bean Co was the only vegan accommodating restaurant open in the area after 7pm on a Sunday night! We ordered the Big Burrito (Vegan), the Vegan Tijuana Tacos, and the Baja Tostada Salad (with soyrizo subbed for cheese & sour cream). It was delicious and very filling, fully satiated our post-AT-hiking appetites!
Read moreThe food is not contamination free unfortunately (as is the case with most non-vegan restaurants) but the vegan options allow vegans to have a filling meal with the knowledge that no funds will go towards the purchase of any future animal products.
The staff was very helpful and willing to check ingredients on specific items to see if they are vegan. We had the corn fritter special (minus the honey) as a desert the second night we ate at Baja Bean and that was a great decision!

I agree with the other reviews, get a vegan baja burrito. It's done in almost no time because they don't have to cook any meat and your hunger will be satisfied. Their chips and salsa that comes with it is satisfying too.

Needed a place to eat on a long drive and nothing was open but this place. Lucky us! Vegan empanadas with soy chorizo were soooo good. They will replace any meat item on the menu with tofu. I got the “street tacos” with tofu and they were fantastic. Not sure what the other review was on about—the tofu was SO flavorful. Beans, rice, guac, and tortillas all free of animal products and announced as such on the menu. Partner got a cheddar and bean burrito that was also good because the beans are tasty and have a kick!

Per the waiter's recommendation, I ordered chips with salsa and guacamole as well as a burrito with the vegan chorizo. The meal was very tasty and I appreciated that the waiter was helpful and knowledgeable about veganism.

A good, but not great option - Edit
Our first tip off was when the waiter told us, “We have tofu, but we don’t recommend it”. When asked to expand on this statement, he responded “it tastes kinda bland”. OK, so they offer tofu as an option, but the kitchen has no idea how to prepare it? That about sums it up; however, being a Mexican-style restaurant in a college town it does offer veg/vegan options. One caveat is that you must be willing to negotiate to get exactly what you do and don’t want. For example, they favor wheat tortillas so I ordered a vegetable burrito filling (minus the cheese, sour cream) with added tofu (more on this later) and some soft corn tortillas on the side. It was very good. The chips, salsa and guacamole were also good. As for the tofu: it was served cubed, plain and had clearly been frozen. I would suggest that the kitchen invest a little time to learn how to prepare this wonderful item in tasty, Mexican fashion. One other criticism, the floor was littered with bits of food, etc., which was a turn off as it gave the impression that other areas of the place might not be a clean as they should be.

Nice, Fun, and Friendly Restaurant - Edit
I live in Staunton and eat here about once a month. It's a great place to go with non-vegan friends. Good beer and drink selection too. They have a few vegan options like veggie fajitas (no cheese, etc) and a vegan burrito. Many other dishes can be made vegan by asking them to not add cheese or sour cream, etc. The staff understands and it's never a problem. It's a funky place with lots of locals right in the middle of downtown.

It was a great place, very comfortable and looked nice. It had plenty of vegetarian and a few vegan options plus, things that could be made vegan. The staff was attentive and helpful.
