Pleasantly surprised! - Edit
I went here for the first time expecting to have a couple options based on their online menu, however after asking my server, I was informed they could make nearly everything vegan and provided her own vegan recommendation which was delicious. Will definitely be returning!

We came here for a birthday celebration on a Friday night with no reservation and had a great time, the service was great and the food was super fresh and delicious. The bibimbap had flavorful veggies and the beyond burger umami balanced with it super well. The little side dishes of vegetables that came for the table were a great addition. I had a cocktail, the Casey Mule, and it was great. My omni friends all enjoyed their dishes and drinks too

Expensive but Nice Atmosphere - Edit
I found the food at Arario hit or miss. I loved the fried spring rolls soooo much, they were delicious. On the other hand, the japchae was so bland and tasted only like the mock burger meat it was cooked with. Also was too expensive for that low of quality.

One Good Vegan Option. - Edit
Clearly labeled vegan Japchae on the menu that you can add Tofu to. It was delightful. Although the added rice with the noodles seems redundant and I didn't eat it. We had a mixed group, and they brought out some small bites to the table of black beans, sprouted beans, and cucumber, and they instructed me that the Kimchee had a shrimp base.

Pros: One good option.
Cons: Literally only one vegan option.

Bibimbap All the Way! - Edit
It's nice to have an upscale and modern restaurant cater to your dietary needs. I've tried things on their Vegan Chef Challenge menu and on their regular menu (one soup can be made vegan). The bibimbap is a crowd favorite with everyone I go with and the vegan bibimbap is no exception. Also the vegan pot stickers are delicious!
