I feel like they don't give enough tofu in the dishes but the flavor is good. Would be 4 star if better portion ratio (rice/veggies to tofu ratio)

One of the best options for vegans - Edit
Anise is a mixed restaurant with updated Vietnamese cuisine, and every single menu item has a vegan option! This includes their very good vegan pho and banh mi, but they go out of their way to make vegan options for everything. Only reason I can’t give it five stars is happy cow doesn’t allow the option for not fully veg restaurants, but it is a five in my book!

Love this spot. Everything on the menu that’s vegan is clearly marked, and it’s all delicious. 5/6 options for main entree, plus vegan crispy rolls or spring rolls. Plus, they have a decent size bar with three big TV’s if you’re looking for somewhere to watch sports and eat/drink.

Vegan options were pretty delicious. But they were expensive compared to similar places I have been. The tofu was cooked fantastically.

I can't say enough good things about this place, I'm so glad we went!! I'm not vegan but as a vegetarian I'm always excited to try new innovative foods. This place is AMAZING!! If I could give it 10/10, I would! I got the veg Bánh Căn Chay to start which was a beautiful balance of crispy and chewy and the mango was a perfect touch. For my meal, the owner came by to take the order and I asked him for advice since I was stuck between the pho, and a couple other items. He helped he make the decision because he made the comment that if I've had a certain type of food before, why not try something unique to their restaurant; Hence the decision to get the Anise® Vegan Special...I'm not one to splurge on food that much but OMGGGGG. It was extremely unique because the tofu dish came out in a hot pan and the veggies and sauce accompanying it was on a different plate. The owner's wife also came by to explain the logic, as well as how she came up with the idea for the dish, and it was really fun to hear that information! I was stuffed and didn't even manage to finish, but thanks to the way the food came out, I was able to save it for the next day and it tasted just as perfect! The yumminess of the baked tofu combined with the freshness of the veggies and tanginess and slight spiciness of the sauce and peanuts was to die for. I'd come back to Denver just to come back to this place!

On top of that, the owner (or possibly manager or both) stopped by to see how things were and when we mentioned 3 of us were vegan he was excited to speak to us about hopefully expanding their options.
The food itself was incredible - extremely delicious and flavorful. 4 of us ate vegan and we all had different dishes and we were all very impressed. I had the lemongrass tofu dish and it was yummy. It was just as delicious the next day as leftovers.
I can't recommend this place enough. Happy Cow will only let me give 4 stars to a regular restaurant, but if I could I'd give it 5.

Best Vegan Pho - Edit
I've been to Anise several times now, they have the absolute best vegan pho that I've had in Denver. They have a few other vegan options on the menu but I haven't tried anything else yet because the pho is so addicting. Everyone is super friendly and the place is super clean and modern. 3 large TV's above the bar if you want to come in and catch a game!

I tried the vegan spring rolls, vegan fried rice and vegan lemongrass noodles. All were really delicious with fresh mint and cilantro, and freshly fried tofu. The server understood what a vegan diner would want and was careful not to bring fish sauce, which is what I usually experience at Vietnamese restaurants. The restaurant is clean and modern feeling, with an overall healthy food vibe.

I have had vegan pho from several places in Denver, but Anise's vegan pho is the most unique. It's much more delicate (still flavorful), clean, and healthy feeling. The portion is very generous, and I ate far too much, but didn't feel disgusted with myself afterwards. All of the tofu Anise uses is so crispy on the outside and soft on the inside. I really enjoyed all of the appetizers, but my favorites were the vegetarian ones: the crispy vegetarian rolls and the crispy rice omelet. Their tofu appetizer is also great for vegans and comes with a great dipping sauce that's kind of like a extremely flavorful broth. They also make really great fruit smoothies. I believe it's a family-owned establishment, and the owner is really friendly and really cares about your experience and how you like the food. He usually speaks with me and asks me how I liked the food every time I am there. The ambiance is nice, it's not too noisy, and you can tell they put thought into making it look nice, clean, and modern. I would give Anise 5 stars, but Happy Cow won't let you give more than 4 unless it's fully vegan/vegetarian.
