Popular pan Asian veggie restaurant - Edit
It seems that most vegetarian/vegan restaurants in Taiwan tend toward two extremes: popular eateries with a broad audience and hole-in-the-wall places specifically for veggies/vegans. This place is definitely the latter. I was in a bit of a rush, so I ordered kimchi fried rice and nothing else. It came with a small bowl of miso soup. The menu had a lot of great items from rice and noodles to dumplings and fried (stinky?) tofu. They were steaming dumplings outside on the sidewalk. There’s not tons of seating but it turns over quickly. I shared a table with a stranger (I may have cut in line unknowingly…I’m still unsure). It’s not fully vegan, so you’d need to let the know when you order to make any accommodations. There is an English menu and English speaking staff. I don’t know that I’ll make it back before I leave Taichung, because there appear to be many great veggie/vegan places here that I wanna check out. The price is very reasonable, and I’d certainly come back if I stayed here longer.

The food here is amazing! They have an English menu but the (egg and dairy) logos are only on the menu in mandarin. It's better to translate to double check which are vegan friendly :)

Tasty vegan ramen - Edit
Very large menu with a range of options including ramen and a variety of dumplings and side dishes. English menu is also available. I ordered the ‘spicy as hell ramen’ which turned out to be quite mild but very flavourful.

It’s not a fancy restaurant but you could find good local taste with veganized dishes. When you visit there, please order the Bao series which is amazing
