Preheat oven to 200C
Combine the water, sugar, and yeast, and let it stand for about 10 minutes.
Combine the flour, salt and olive oil in a large bowl and stir, add the yeast mixture and stir until you form a soft dough.
Turn the dough out on to a floured surface and knead for 10 minutes until smooth and elastic. Form into a ball and place in an oiled bowl. Cover the bowl with a damp towel and let sit for up to 1 hour until it doubles in size.
Once doubled in size, turn dough out on to a flat surface and knead briefly.
Divide dough into 10 small balls and flatten each ball using a rolling pin. Spread 1 tablespoon of zaatar mix over each round.
Bake for 8-10 minutes until lightly browned. Serve warm and top with lemon juice (optional).
