Vegan Cranberry Cupcakes

    Instructions

    1. Preheat oven to 180 degree celsius. Line cupcake tray with silicon cups.
    2. In a bowl, mix dry ingredients and set aside.
    3. Add apple cider vinegar to soymilk and set aside.
    4. Mix dry and wet ingredients using a spatula until combined. Add dried cranberries as desired. Do not overmix.
    Spoon mixture into silicon cups.
    5. Bake for 20 minutes or until the centre comes out clear when pierced with a toothpick, Transfer to cooling rack and let it cool completely.

    Ingredients

    Dry ingredients
    1 + 1/4 cup unbleached flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp Himalayan salt
    1/2 cup raw sugar

    Wet ingredients
    1 cup soymilk
    1 tsp apple cider vinegar
    1 tsp vanilla extract
    1/3 cup flaxseed oil/olive oil

    Dried cranberries - add as desired.
