    Instructions

    Cook sweet potato as desired. One option is to poke holes in it and microwave for 5 minutes.
    Remove peel, and slice as desired.
    Place in a bowl with warm creamy coconut milk. Drizzle with agave nectar.
    Add a light zest of fresh ginger and cinnamon. Garnish with nuts for a crunchy texture (optional).

    1 sweet potato
    Coconut milk, canned
    Fresh ginger
    Cinnamon
    Agave nectar
    Chopped nuts (optional)
