Spinach and Polenta Pie

    Instructions

    Combine polenta and water.
    Boil in a saucepan until polenta bubbles and mixture expands.
    Press polenta mixture into a greased pie dish.
    Combine spinach, sesame seeds and soy cream cheese.
    Pat down into the polenta base.
    Cook in a medium oven for 30-40 minutes.
    Serve with salad.

    Ingredients

    1 cup polenta (corn meal/semolina)
    2 cup filtered water
    2 cup spinach leaves, chopped in food processor
    1/2 cup sesame seeds
    6 tablespoon soy cream cheese
