Red Lentil Thai Chili Flavor

Instructions
Heat a medium saucepan over medium heat. Add oil and saute onion and red pepper with a pinch of salt, for 5 minutes.
Add garlic and saute 1 minute.
Add chili, potatoes, lentils, pinch of salt, and vegetable broth. Cover and bring to a boil, then reduce heat to low-medium.
Let cook for 15 to 20 minutes, stirring occasionally to prevent sticking.
When the lentils are cooked and potato is tender, add the remaining ingredients and increase stove heat. Cook for 3 minutes.
Season with salt, to taste. Serve with cilantro and lime juice.
