Melt the coconut oil in the microwave, if needed, until completely melted.
Place the nuts, dried fruit, cacao powder and salt in a blender and blitz until it resembles a crumble and begins to stick together as it's mixed.
Check the consistency, and if the mixture hasn't started sticking together, add a splash of water.
Spread the mixture into a baking tray lined with parchment paper. Flatten down with the back of the spoon so that it is evenly spread. Aim for a thickness of about 1/2 - 1 inch, depending on preference.
Place in fridge and allow to set for at least 30 minutes, before cutting into squares.
Keep stored in an airtight container in the fridge, where they should keep for about 5 days.
