Instructions
Heat oil in a large pot over medium heat.
Add onion and cook until soft/translucent, about 5 minutes.
Add garlic, ginger and chili. Saute for 5 more minutes.
Add tomatoes. Stir to combine.
Add peanut butter, coriander and curry powder. Stir to combine.
Add broth/water and sweet potatoes. Stir to combine, then cover and simmer until the sweet potatoes are soft but not disintegrating, about 15 minutes.
Add black beans, peas/corn, hearty greens, and vegan sausages. Cook until heated through.
Add salt and pepper to taste, then enjoy!
