Preheat oven to 350F.
Cook noodles according to box instructions.
Whisk together ingredients minus spinach and seeds in a mixing bowl. Adjust to taste.
Cut up spinach into thin strips.
Mix all ingredients together and place in baking dish.
Bake uncovered for 30 minutes or until slightly crispy on top.
Top with pumpkin seeds or other garnish of choice. Serve and enjoy.
