Lemon and Almond Cake

Preheat oven to 180° C.
Soak the chia seeds in 20 tablespoons of water to make your "egg".
In the meantime, put the almond butter and 130 gram of sugar in a mixer, turn on the mixer and wait for the mixture to be homogeneous.
When the "egg" mixture is ready add it to the mixer and blend again.
In a bowl add flour, baking powder, and corn starch, mix everything and then add to mixer and blend again.
Finally, add the grated rind of the two lemons.
In a separate bowl whisk the aquafaba until stiff and then add it to our mixture together with the juice of a lemon and the remaining 120 gram of sugar and mix.
Line a baking tray with parchment paper, pour mixture and level the surface.
Bake for 60 - 70 minutes.
Remove from oven and let cool. Cover with powdered sugar, serve and enjoy!
