Chocolate Ganache and Yoghurt Parfait

    Instructions

    1. Melt the chocolate chips using the bain-marie method (a bowl suspended over a pan of water).
    2. Mix the melted chocolate into half (250g) of the yoghurt with a few drops of vanilla stevia. Stir well until combined.
    3. Mix a few drops of vanilla stevia into the rest of the yoghurt.
    4. Create layers of ganache, fruits, yoghurt, and optional compote/jam in a tall glass.
    5. Decorate with fresh fruits and mint leaves on top.

    Ingredients

    Ingredients (serves 2)
    500g vegan yoghurt of your choice (Recommend Alpro plain no sugars)
    150g vegan chocolate chips
    A few drops of vanilla stevia
    100g of mixed berries or fruits of choice
    Optional jam or compote
    Mint leaves (for decoration)
