Aubergine and Plum Tomato Pasta Sauce

    Instructions

    Soak aubergine in salted water for 15 minutes. Strain and then pat dry on an absorbant cloth.
    Fry onion and garlic in a pot until transparent.
    Drain plum tomatoes and cut into 1/4.
    Fry aubergine on hot flat top griddle until well browned.
    Add tomatoes to the pot and simmer for 5 minutes.
    Add salt pepper, and basil, and stir.

    Serve with a pasta of your choice and enjoy!

    Onion - peeled and diced
    Garlic cloves (2-3) - peeled and chopped
    1 tbsp olive oil
    Tins plummed tomatoes
    Aubergine (eggplant) - diced
    Salt and pepper
    Basil - freshly chopped
