I have been a vegetarian for about 18 years now. I'm not quite vegan but consume much less cheese, milk, and eggs now. I am a recent widow originally from Illinois now living in the Idaho panhandle known as the Palouse. Most of the US lentils are grown here as well as dry peas, garbanzos and wheat.
