As a chef I this industry for 18 years, I have watched the trends and the now norm for restaurants to view our vegetarian and vegan diners as more than deserving of a salad and veggie burger. We push boundaries in our small community by including tofu, pulses, meatless dishes and world cuisine to open up the dialog and taste buds of all our customers.
