In 2012 I became vegan. The most important change in my life. In the same year I opened "Die Weinstube" as the first vegan restaurant in a hotel in germany. Today I run "Vegan Hotel Nicolay 1881" placed in the beautiful nature of the moselle river with four vegan restaurants, terrace, homemade cakes, icecream and vegan wellness.
