I started my vegan journey in earnest in July 2022, being mostly vegan before then, mostly vegetarian before then, and a remorseful omnivore the remainder of my life. I’ve always enjoyed cooking, but this the vegan journey has upped my game. I’m taking the online Forks Over Knives cooking course, and I’ve become even more confident in the kitchen! Made quinoa taco “meat,” which was great, and a delicious vegan queso made with boiled potato, cashews, and lots of seasonings. I even made incredible black bean based oat flour brownies! Yes, they were really good! I firmly believe this change in my life has greatly expanded my culinary horizons, and in no way do I feel limited in my food choices. The only disappointing things are the lack of vegan options in 99% of the restaurants in Myrtle Beach, SC, and the people who look down on you for choosing a vegan life. We have a lot of food bullies in my area, but I will prevail! I would like to see an edit to the Happy Cow app to be able to include restaurants that vegans should avoid at all cost. One such restaurant in Myrtle Beach is newly-opened Indulge. Out of their entire menu, the only vegan option is a pathetic green salad. Every single item otherwise has some kind of animal product in it. Yes, I totally quizzed the server, and he was very apologetic about my lack of anything tasty to eat while dining there.
