Do you speak Thai? Maybe it was English they didn't understand rather than the concept of veganism. I don't speak Thai but learned to look/ ask for เจ ("jay") food, which means vegan + no onions, garlic, or alcohol. Many Buddhists eat this way on auspicious days so it's widely understood. Google translates vegan and vegetarian as มังสวิรัติ ("mangsariwat") which I've been told actually just means "without meat" so you might still get egg or fish sauce.
