It sounds like you unfortunately went on a rare day where they were out of vegan cheese slices to melt on the mac and cheese. Personally I like the sauce but the melted cheese adds more cheesiness too. As for the crumbles, they are BeyondMeat beef crumbles. I thought they were good but I prefer their BeyondSausage since it's more substantial.
