Dear Laura, Thank you for visiting our restaurant. It's unfortunate we didn't manage to please you. We don't normally answer to reviews, the reason is simple, we believe everyone is entitled to their opinion and we leave it at that. Folks can make their own minds by reading the good and bad reviews. The reason why I am answering to your review is only regarding the Parmesan cheese. There are a few points about it: - There's no such a thing as vegetarian parmesan. You can have "parmesan-like" cheese, or "vegetarian Italian hard cheese". But you will not find Parmesan, the name parmesan is protected and you can only call your cheese Parmesan if you follow a certain recipe. Until this regulation changes, there'll be never a vegetarian Parmesan. That's the ONLY item in our menu that is not "technically" vegetarian. Now if you think because of that we should not qualify as a vegetarian restaurant, I will agree to disagree. We are upfront about it and we let it clear on our menu, we also provide a vegan alternative for anyone who has issues with it. If finding Parmesan on the menu insults you, so maybe our restaurant is not for you. Everything we do is all about sustainability. We are trying to offer everyone an alternative diet that is sustainable, clean, environmentally minded and yet still delicious. We never propose to be strictly vegan. We are more concerned with being organic and environmental issues than being vegetarian. Most of our customers, at least 85%, are meat eaters. We are very proud to say we represent for all of them an introduction to vegetarianism. Even though that is not our intention. We will not win people over by being radicals. We believe in a dialogue where we try to attract people with a conversation over a sustainable way of living and we demonstrate a few ideas on how to do it. Our food is organic. 80% of our dishes are vegan. All our drinks are vegan an organic. All our wines are vegan, organic/biodynamic, low sulphite, natural. All our food is handmade by us using premium products. All beers and spirits are all vegan, organic, handcrafted by small independent producers. We are doing more for the environment than most of our competition. We use only environmentally friendly cooking methods. There's no gas or any form of energy waste in our kitchen. It's a pity you gave us 3 stars because of our Parmesan. We knew we wouldn't please everyone. I am truly sorry this has upset you. Warmest regards, Emerson
