Hi! Artesanal Italian gelato (ice-cream) is made with cow milk and cream (as the word say itself). You need fat and protein to make an ice cream: impossible to make artesanal italian gelato with soy milk , if you find vegan gelato , please ask yourself wich kind of soy , protein and fat they use to say it is vegan. Vegan doesn't always mean healthy , artesanal and eco-friendly. Sorbets made with fresh local fruits , as avocados , pineapple and passion fruits are much better than fakes italians ice creams
