I sometimes use quinoa spaghetti but it tends to fall apart a bit)<\/p>\n<p dir=\"ltr\">A few big handfuls of spinach, coarsely chopped<\/p>\n<p dir=\"ltr\">2 vegan chicken patties, cooked and cut into strips (If I\u2019m not making my own, Chik\u2019n Patties by Quorn are yummy)<\/p>\n<p>\u00a0<strong>Make the sauce<\/strong><\/p>\n<ul>\n<li>\n<p dir=\"ltr\">Heat olive oil in a large pot and saute the onions and garlic for 5 minutes, stirring occasionally.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add the mushrooms and cook for an additional 2 minutes.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add the basil, garlic, onion, oregano, sea salt and sugar and stir to combine.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add in the tomatoes and stir until all ingredients are incorporated.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Turn heat to low and cover the pot with a lid so that it is at a slight tilt (not tight on the pot).<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Simmer for 25 minutes.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Turn off and taste for salt and pepper.<\/p>\n<\/li>\n<\/ul>\n<p><strong>\u00a0Assemble<\/strong><\/p>\n<p dir=\"ltr\">Cook pasta per the instructions on the package.<\/p>\n<p dir=\"ltr\">Rinse and strain the pasta (strain until pasta is as dry as possible).<\/p>\n<p dir=\"ltr\">Place pasta on a plate, top with spinach and then the sauce (the heat from the sauce will wilt the spinach).<\/p>\n<p dir=\"ltr\">Place the chik\u2019n strips on top of sauce and serve.<\/p>\n<p dir=\"ltr\"><strong>\u00a0Cook\u2019s Notes<\/strong><\/p>\n<ul>\n<li>\n<p dir=\"ltr\">You can use whole tomatoes as long as you put them in the food processor to chop up before cooking.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">You can use fresh herbs instead of dried herbs, just keep in mind that the fresh herbs won\u2019t be as strong so you will have to use more.<\/p>\n<\/li>\n<\/ul>\n<p>Molly Patrick has worked in the vegan food realm since 2003.
