This lasagna is a labor of love. It takes time and there are several steps to follow.<\/p>\n<p dir=\"ltr\">I will say however, that the end product is well worth your effort and it is one of the healthiest most yummy lasagna recipes around. There&#8217;s nothing like spending time and love on a recipe only to find out it is only okay. This recipe is more than okay. You will love it, you will share it and you will make it again.<\/p>\n<p dir=\"ltr\">There are a few things you can do to make it easier on yourself. I\u00a0recommend\u00a0making the marinara and the cheesy tofu mixture a day in advance. Let&#8217;s start with the marinara sauce.<\/p>\n<h2>Marinara Sauce<\/h2>\n<p><em>WHAT YOU WILL NEED <\/em><\/p>\n<p dir=\"ltr\">2 tablespoons olive oil<\/p>\n<p dir=\"ltr\">6 cloves garlic, minced<\/p>\n<p dir=\"ltr\">2 small onions, diced (or 1 large onion)<\/p>\n<p dir=\"ltr\">2 cans diced tomatoes (12 oz.)<\/p>\n<p dir=\"ltr\">3 tablespoons tomato paste<\/p>\n<p dir=\"ltr\">1\/2 cup (packed) fresh basil leaves, left whole<\/p>\n<p dir=\"ltr\">1 tablespoon onion powder<\/p>\n<p dir=\"ltr\">1 tablespoon garlic powder<\/p>\n<p dir=\"ltr\">2 teaspoons dried oregano<\/p>\n<p dir=\"ltr\">1 teaspoon salt<\/p>\n<p dir=\"ltr\">2 teaspoons sugar<\/p>\n<p dir=\"ltr\"><em>HOW TO DO IT<\/em><\/p>\n<ul>\n<li>\n<p dir=\"ltr\">Heat olive oil in a large pan and saute the onions and garlic for 5 minutes on medium heat.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add both cans of tomatoes, tomato paste, fresh basil, onion powder, garlic powder,oregano, salt and sugar.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Turn heat to medium low and simmer for 20 minutes, stirring occasionally.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Turn heat off and in two batches, blend in a blender until smooth (you may want to wait for it to cool a bit before you blend it).<\/p>\n<\/li>\n<li>Set aside<\/li>\n<\/ul>\n<p dir=\"ltr\">\u00a0Next:<\/p>\n<h2>Cheesy Tofu Mixture<\/h2>\n<p><em>WHAT YOU WILL NEED <\/em><\/p>\n<p dir=\"ltr\">1 pack firm tofu (14 oz.)<\/p>\n<p dir=\"ltr\">1 tablespoon lemon juice<\/p>\n<p dir=\"ltr\">1 teaspoon dried dill<\/p>\n<p dir=\"ltr\">1 tablespoon nutritional yeast<\/p>\n<p dir=\"ltr\">1 teaspoon dried basil<\/p>\n<p>1\/2 teaspoon salt<\/p>\n<p><em>HOW TO DO IT<\/em><\/p>\n<ul>\n<li>\n<p dir=\"ltr\">Place tofu in a bowl and mash with a fork until it becomes the consistency of ricotta cheese.<\/p>\n<\/li>\n<li>\n<p dir=\"ltr\">Add the lemon juice, dill, nutritional yeast, basil and salt and stir until all ingredients are combined.<\/p>\n<\/li>\n<li>Set aside.<\/li>\n<\/ul>\n<p dir=\"ltr\"><strong>And finally, it&#8217;s time to assemble.<br \/>\n<\/strong><\/p>\n<p dir=\"ltr\"><strong>Additional Filling Ingredients<\/strong><\/p>\n<p dir=\"ltr\">1 box whole wheat lasagna noodles (do not cook)<\/p>\n<p dir=\"ltr\">4 cups mushrooms, sliced<\/p>\n<p dir=\"ltr\">4 cups fresh spinach, chopped (if the leaves are baby leaves, no need to chop)<\/p>\n<p dir=\"ltr\">2 cups grated carrot<\/p>\n<p dir=\"ltr\">4 cups sliced kale<\/p>\n<p dir=\"ltr\"><strong>Assembly<\/strong><\/p>\n<p dir=\"ltr\">You can assemble this as you see fit or you can follow my method which goes a little somethin\u2019 like this:<\/p>\n<p dir=\"ltr\">Spread 1 cup of marinara sauce evenly on the bottom of the slow cooker.<\/p>\n<p dir=\"ltr\">Followed by a layer of noodles (may have to break them a bit to make them fit)<\/p>\n<p dir=\"ltr\">1\/3 cup cheesy tofu mixture<\/p>\n<p dir=\"ltr\">1\/3 of the mushroom<\/p>\n<p dir=\"ltr\">1\/3 of the carrots<\/p>\n<p dir=\"ltr\">1\/3 of the spinach<\/p>\n<p dir=\"ltr\">1\/3 of the kale<\/p>\n<p dir=\"ltr\">2 cups sauce<\/p>\n<p dir=\"ltr\">layer of noodles<\/p>\n<p dir=\"ltr\">1\/3 cup cheesy tofu mixture<\/p>\n<p dir=\"ltr\">1\/3 of the mushrooms<\/p>\n<p dir=\"ltr\">1\/3 of the carrots<\/p>\n<p dir=\"ltr\">1\/3 of the spinach<\/p>\n<p dir=\"ltr\">1\/3 of the kale<\/p>\n<p dir=\"ltr\">1 cup of marinara sauce<\/p>\n<p dir=\"ltr\">layer of noodles<\/p>\n<p dir=\"ltr\">remaining mushrooms<\/p>\n<p dir=\"ltr\">remaining carrots<\/p>\n<p dir=\"ltr\">remaining spinach<\/p>\n<p dir=\"ltr\">layer of noodles<\/p>\n<p dir=\"ltr\">remaining cheesy tofu mixture<\/p>\n<p dir=\"ltr\">remaining marinara<\/p>\n<ul>\n<li>\n<p dir=\"ltr\">Place \u00a0and secure the lid on your slow cooker and cook on low for 3 1\/2 hours.<\/p>\n<\/li>\n<\/ul>\n<p dir=\"ltr\"><strong>Cook\u2019s Notes<\/strong>: Don&#8217;t cook the noodles before putting the
