Make it with love and watch your peeps smile with yumminess. Now that’s giving! 2 tablespoons olive oil 1 large shallot, minced 12 cups mushrooms, sliced (any variety will do) 1/2 teaspoon sea salt 12 turns cracked black pepper 1/4 cup white wine 1/3 cup coconut milk 2 tablespoons fresh tarragon Crusty bread &#160; Heat oil in a skillet over medium heat. Add shallot and cook for 2 minutes. Add mushrooms, salt and pepper and cook for 5 minutes. Add wine and cook until liquid is evaporated but not completely, about for 7 minutes Add coconut milk and simmer for 5 minutes. Stir in tarragon and spoon over toasted crusty bread. &#160;</p>

					<description><![CDATA[<p>Roger Crab (born approx. 1621 – died September 11, 1680). Roger is the very first non-Asian &#8216;vegan&#8217; / pure plant eater that we have come across to date in our research. Roger Crab was a very bizarre Englishman &#8211; he was &#8211; undefiled with blood &#8211; see below for his full epitaph. He was living a very &#8216;alternative&#8217; &#38; &#8216;close to vegan&#8217; lifestyle more than 350 years ago. Roger had fought in the Parliamentary Army in the English Civil War (which ran from 1642 to 1651) before becoming a haberdasher (either with a shop that sells men&#8217;s clothes &#8211; or shop that sells small items such as needles and thread that are used to make clothes) in Chesham, England. He later became a hermit and worked as a herbal doctor. (1) He is best known for this delightfully eccentric &#38; wonderfully titled booklet. The booklet details Roger&#8217;s lifestyle. He had fully &#8216;dropped out&#8217; of the rat race. The first page lists his &#8216;vegan&#8217; diet: His constant food is Roots and Hearbs, as Cabbage, Turneps, Carrets, Dock-leaves, and Grasse; also Bread and Bran, without Butter or Cheese. As a non-meat eating human I love beans for their protein, fiber and low fat qualities. They are also totally delish. Before I used a pressure cooker I can&#8217;t tell you how many pots of beans that I burned. And yes, being a vegan cookbook author, one might think that a pot of beans would be no biggie. Turns out for me, it sometimes was &#8211; until I discovered the pressure cooker. I highly recommend one for all of your soups, stews and bean needs. 					<description><![CDATA[<p>Last week I went to Wal-Mart to buy a candy thermometer. While wandering around the kitchen ware section, I happened across an aisle filled with canning supplies i.e. glass mason jars and lids. Included in this aisle were 2 lb. plus cans of non-vegan dried eggs, meat, and pancake mix. Also included were dried fruit, vegetables and surprise-surprise, vegetarian meat. The meat included beef, taco meat, chicken, and bacon. With the exception of the taco meat which smells like tacos, the other soy products smell like imitation bacon bits. These products may be eaten out of the can as a dried snack. They may also be re-hydrated. The recipes on the side of the can call for 2 parts water to be mixed with 1 part of this vegan meat. Depending upon the product in question, the vegan meats are cooked by simmering them for anywhere between 3-20 minutes. For added flavor, I recommend simmering these products with a vegan beef or mushroom bouillon. Using apple juice also provides a natural sweetness without overwhelming the flavor of this product. I will say however, that the end product is well worth your effort and it is one of the healthiest most yummy lasagna recipes around.
