Aside from the fact that they are pretty expensive, or that one in 3 is either too raw or half spoiled, avocados are actually pretty great. You can eat them raw, stick them in a salad, use themย instead of butter in your baking, smush them into a smoothie, turn them into ice-cream (or face cream)โyou can even use them to make dips. Withย a little bit of imagination, an avocado can take you a long way!
Guacamoleย is one of my favorite avocado based starters, but this stuffed avocado shells recipe is equally, if not more appetizing, especially if you want to prepare something that will impress at a dinner party. There’s also some lime and dill in there, which give the dish a really fresh taste (perfect for hot summer days). ๐
STUFFED AVOCADO SHELLS
Ingredients:
1 ripe avocado
Dill
1 tsp cumin seeds
Juice from half a lime
Half a red pepper
1/4 onion
2 tbsp cooked chickpeas
Olive oil
Salt
Directions:
1. Cut the avocado in half, and carefully scoop out the flesh from the shell.
2. Put all the ingredients in a food processor, and process until the mixture resembles a dip.
3. Fill the avocado shells with the mixture, and garnish with lime slices.
