You can usually find vegan waffles in the freezer section at your local Trader Joe’s, Whole Foods, or other health food store. So in case you weren’t craving waffles enough already, I wanted to share one of my favorite ways to eat waffles. It’s so easy and no non-vegan could ever tell the difference. Hope this inspires you to get creative with your breakfast and explore how many vegan substitutes there are out there in the world!
-Add a bit of vegan margarine to each waffle
-Pour on a whole cup of fruity soy yogurt (pictured here is Whole Soy)
-Drizzle some syrup on top (agave or vegan maple)
-Finish with some warm berries*
-If you’re feeling extra crazy, sprinkle on some powdered sugar too!
*Those are blueberries in the picture. What we do is take some frozen berries, heat them up in a pot and mash them a bit to get some juice. Then stir with a tiny bit of syrup and you’ve got a super yummy fruit topping.
