While backpacking through South America, I wound up (aka got stuck) in northern Argentina for a few weeks, waiting for the snow to melt so that I could catch a bus into Bolivia. Argentina is known to be one of the meat capitals of the planet, but I was shown that change is quickly coming. Vaikuntha, a beautiful vegan restaurant in the Argentinian town of Salta is proof of that.
When I heard about a new vegan restaurant opening in Salta, I contacted the owners and I offered Vaikuntha a photo sponsorship and was shocked at the wide array of flavors that they were whipping up in their little kitchen. They were baking their own bread, rolling their own sushi, and freezing their own sorbet. This chef’s team wears many hats!
The restaurant has a rock and roll vibe with a sweet outdoor patio that’s packed in the summer. For the winter months, the kitchen warms up their clientele with homemade Locro, the region’s famous hominy stew that’s sure to bring some heat back to any chilly backpacker’s toes.
If you’re still feeling a little chilled after a big bowl of Locro (which, trust me, you won’t be), Vaikuntha offers piping hot cappuccinos and a wide array of hot teas to relax with while you listen to music and soak in those Salta vibes.
If you find yourself in the north of Argentina, a trip to Salta is a must. And now that they’ve got themselves a groovy little vegan restaurant in the heart of the city, the reasons to check out Salta are piling up.
