The Canary Islands are a hot spot for European travelers during the winter, and for good reason. A quick flight from mainland Europe and you’ll go from cold and grey to sunny and smiling in just a few hours.
I found myself on the island of Fuerteventura for a few weeks this winter, taking a short vacation from my long vacation on Tenerife. After an easy island hopper flight, I touched down in Fuerteventura and immediately did a search for the nearest vegan restaurant around me, hoping that one of the vegan spots there would be interested in some fresh photography for their restaurant.
My search landed me in Corralejo, a little Oceanside town in the northern side of the island. Known for having excellent year-round conditions for surfing and kiteboarding, the sands of Corralejo whip across the road as you pull into town, always accompanied by a slew of brightly colored kites flying on the horizon.
I had just checked into my hostel and put my bag down when I got a reply from Nick, the owner of H2O Juice Bar and Vegan Cafe. He told me to come on by for a veggie burger and some fresh-squeezed juicy goodness. I’m sure everyone at the hostel was wondering why I literally sprinted out of the hostel after arriving, but I’m sure that they’d understand if I had told them. There was no time to socialize. It was juicin’ time.
Nick greeted me with H2O’s fresh-made burger of the day, a green spinach burger with fresh squeezed mango-orange juice and a side of fresh hummus. My kinda meal.
Everything was superb and I even got to make a new friend, a non-vegan chica from Barcelona who was interested in learning more about the vegan lifestyle and loved veggie burgers. She was definitely in the right place. And only one week later, I got a message from her letting me know that she’d officially made the switch and would be looking out for activism events in her city. That’s what I call progress 🙂
If you’re looking for a good-vibes-only vegan café to sit outside and enjoy one of the best veggie burgers in the Canaries, H2O is the place to be.
