As the seasons start to change, I start thinking about pumpkin, winter squash and the fall harvest. My dogs love pumpkin, so I made these pumpkin cookies for them, and they were a hit. With only five ingredients, they come together really quickly. You can use homemade pumpkin if you want, but I used organic pumpkin in a box, and it worked great. Make sure to store the cookies in a container with a tight fitting lid, or in a treat jar. If you want a crispier cookie, just increase the baking time.
RECIPE
2 cups of flour
1/2 T. baking powder
1 cup of pureed pumpkin
2 T. safflower oil
1 T. molasses
DIRECTIONS
-Preheat oven to 350 degrees. Lightly grease a large cookie sheet or line with a large sheet of parchment paper.
-In a large bowl, mix the flour and baking powder. Add pumpkin, oil, and molasses and mix with a spoon until incorporated. Knead by hand for about a minute or so, until the dough is somewhat smooth. If dough is sticky, sprinkle in some additional flour. On a lightly floured surface, roll out dough to 1/4 inch thickness. Cut dough into shapes with a large bone cookie cutter (or whatever cookie cutter you have on hand). Bake for 25 minutes (or longer if your buddy desires a crunchier cookie). Makes about 26-30 cookies.
