Lately I can’t seem to shut up about chia seeds. I’m absolutely obsessed with them! They go in pretty much all of my smoothies, even in my water. Andddd (surprise, surprise) chia pudding is one of my favourite desserts! 😀
Even though chia seeds are not as pricey as some of the other superfoods you can find on the market, they are incredibly beneficial to the body. I personally include them in my diet for the Omega-3 and the energy, but they are also good for weight loss or for improving metabolic health. Plus they are full of antioxidants and protein. Magic seeds is what I call them!
Today I wanted to share with you this plum jam with chia seeds recipe. It’s great for breakfast, brunch, or whenever you fancy a snack.
Ingredients For One Small Pot:
500g plums
250g cane sugar
Juice from 1 lemon
1 cinnamon stick
1 tbsp chia seeds
Directions:
1. Cut the plums into pieces, and cook on the stove with the sugar, lemon juice and cinnamon stick over medium flame for about 15 minutes, or until you have a mixture that resembles jam. Be sure to stir constantly to prevent the sugar from sticking to the bottom of the pot. Add the chia seeds towards the end of the cooking process.
2. Remove the cinnamon stick. Store the jam in a sanitised jar, and seal. Stick in the fridge once opened.
