Meatless Mondays: Stuffed Avocado

Hi!

Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. This week’s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach.

Ingredients:

2 avocados

1 carrot, grated

dash of lemon juice

sprinkle of cracked black pepper

Method:

Spoon out the avocado flesh carefully with a small spoon

Leave a small amount around the edge (see above)

Mash the removed avocado flesh

Combine with carrot, juice and pepper

Stuff the mixture back into the avocado halves

Serves 2-4 people

    Such a simple recipe, and it looks so delicious. Me like avocado.

    I like that this recipe is so simple that is leaves a lot of room for improvisation. I think this would be delicious with some chopped cucumber in with the carrot!
