Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. Ingredients:
6 okra, sliced
2 zucchini (courgettes), sliced lengthwise
1 red capsicum (pepper), thinly sliced
½ cup linseed (flaxseed)
Olive oil
Tamari sauce
Method:
Stir-fry okra, zucchini and capsicum in wok with a splash of olive oil and tamari sauce
Stir-fry until cooked
Serves 3-4 people
Serve as a main or side dish

July 17, 2012 at 4:42 pmInteresting idea to put flax seeds in a stir fry… I’ve had flax seed in baked goods, cereal, and even flax seed tea drink lightly sweetened. But not yet tried it in a stir fry.
Usually I sprinkle hemp seed atop steamed veggies.
