Meatless Mondays: Stir-fry with Linseed (Flaxseed)

Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. This week’s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach.

Ingredients:

6 okra, sliced

2 zucchini (courgettes), sliced lengthwise

1 red capsicum (pepper), thinly sliced

½ cup linseed (flaxseed)

Olive oil

Tamari sauce

Method:

Stir-fry okra, zucchini and capsicum in wok with a splash of olive oil and tamari sauce

Stir-fry until cooked

Serves 3-4 people

Serve as a main or side dish

    Interesting idea to put flax seeds in a stir fry… I’ve had flax seed in baked goods, cereal, and even flax seed tea drink lightly sweetened. But not yet tried it in a stir fry.

    Usually I sprinkle hemp seed atop steamed veggies.
