Meatless Mondays: Spinach and Polenta pie

Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. This week’s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach.

Ingredients:

1 cup polenta (corn meal/semolina)

2 cup filtered water

2 cup spinach leaves, chopped in food processor

1/2 cup sesame seeds

6 tablespoon soy cream cheese

Method:

Combine polenta and water

Boil in a saucepan until polenta bubbles and mixture expands

Press polenta mixture into a greased pie dish

Combine spinach, sesame seeds and soy cream cheese

Pat down into the polenta base

Cook in a medium oven for 30-40 minutes

Serve with a lovely, colorful salad

Serves 4-6 people
