Meatless Mondays: Stir Fried Quinoa

INGREDIENTS:

Fried Quinoa by Viva la Vegan!

1 cup white quinoa

1 cup red (Inca) quinoa

1 cup black quinoa

6 cups filtered water

600gr frozen mixed vegetables (including carrots, peas, green beans and corn)

1 red capsicum (pepper), diced

¼ pumpkin, grated

Tamari, soy sauce or Braggs to taste

Method:

Combine all quinoa types in a large microwaveable bowl

Rinse quinoa grains

Add water and cook for 10 minutes

Stir, cook for another 5-10 minutes

Quinoa is cooked when a white periphery forms around the grains

In a wok combine all the vegetables and stir fry until cooked

Add the quinoa mixture

Add sauce to taste

Serves 6-8 people

This is a great dish to make for Christmas or other events where there will be a lot of people to feed

Also good to freeze the meal for later
