Grace’s Oodles of Noodles
1 large handful of noodles, any kind
1 tablespoon olive, sesame, or safflower oil
2 garlic clove, diced
1 scallion, finely chopped
sesame seeds
fresh cilantro or chives for garnish
optional: soy sauce to taste
Boil noodle according to package instruction.
Drain and let cool slightly.
Toss all ingredients in a bowl.
Sprinkle sesame seeds on top and garnish with cilantro or chives.
