Homemade Yeast Bread With Kale And Corn

vegan breadIt’s pretty easy to find good bread these days, but there’s still something special about homemade bread. It’s heartier, denser and more delicious than store bought.  You can also put in your favorite additions, and you know it hasn’t been sitting on the shelf in plastic wrap for who knows how long. I make bread the lazy way (via a bread machine). It may not be as fun as the old fashioned way, but it’s quicker and reliable. This bread recipe benefits from the addition of corn, raw kale, nutritional yeast, hemp seeds and flax. It makes for a really hearty and moist bread. Toasted, it is pretty incredible…and made even better sprinkled with my Vegan Parmesan (after you have slathered on some vegan “butter.” You can add or delete whatever ingredients you like. I even added Sriracha sauce once, for a little zip. This recipe is made for a bread machine, but I’m sure it will work quite well the old fashioned way…just make sure to let it rise a couple of times (and cut up your kale really well).

1 1/2 C. water
1 T. Olive oil
2 T. sugar
2 t. salt
1 T. soy milk
4 C. unbleached flour
2 T. flax seeds
2 T. hemp seeds
2 T. nutritional yeast
1 T. vital wheat gluten
1 Package active dry yeast (approximately 2 1/4 t. yeast)
3/4 Frozen corn (thawed)
1 1/2 c. Raw kale (de-stemmed and roughly chopped)

Directions:
Add all ingredients in order of recipe. Place in bread machine under white bread course, medium crust, large loaf. (If doing by hand, make sure and knead the bread well, and have the bread go through two risings until double in size, before baking).
