Avocados are not only super yummy, they’re also one of the world’s healthiest foods. They are full of nutrients, fiber, antioxidants, potassium, and healthy fatty acids. Some even say that they help improve your eyesight, and prevent cancer! Plus you can use them to make so many different things, like smoothies, salads, salsasโyou can even use them as a substitute for butter in baking. AND, best of all, they are super creamy and delicious!
Here’s one my my favourite avocado-based recipes: easy vegan guacamole! Traditionally, guacamole is made with tomatoes, but for this recipe I used steamed carrots just to mix it up a bit ๐
Ingredients (makes one small bowl):
1 big avocado
1 steamed carrot
1 small spring onion
1 garlic clove
juice from 1/2 lemon
salt & pepper
chilli flakes (optional)
Directions:
1. Clean the avocado, and smush it with a fork until you have a paste. I personally like to leave some avocado chunks in there.
2. Cut all the other ingredients into small pieces, and mix in with the avocado paste.
3. Season to taste, and serve with nacho chips.
