I love avocados. But I have to say, I like my avocados on the firm side. When they get too soft, I don’t love them as much. I developed this recipe for avocados that have become too soft to cut up and use in recipes…(but yet haven’t turned brown). This sauce is a cinch to make and only has a few ingredients. Here are some ideas on how to use the sauce:
-Over beans and rice
-As a sauce for tacos or enchiladas
-Over steamed or roasted Yukon Gold potatoes
-As a dip for warmed tortillas, or baked tortilla strips
-As a dip for raw or cooked vegetables
-As a salad dressing
-As a sauce for lettuce wraps
-Over No Meat-Saltado (Lomito Saltado)
RECIPE FOR CREAMY AVOCADO SAUCE
Ingredients:
1 ripe avocado (pitted, peeled & chopped)
1/4 bunch of cilantro (lower stems removed)
1/4 cup Vegan Garlic Aioli
1/2 cup veggie broth
Directions:
1. Place all ingredients in a food processor or blender and blend.
2. Refrigerate any unused portion and use within a day or two, as sauce will discolor slightly. This sauce can also be frozen.
