Vegan Chocolate Cookie Dough Ice Cream Poppers

Here’s a recipe so easy you’ll wonder why you haven’t tried it before. And if you’re a fan of EatPasty vegan cookie dough like I am, you’ll love having just one more way to enjoy it!

Ingredients:

EatPastry (or other vegan brand) cookie dough in any flavor (I used chocolate chip)

-Chocolate syrup (I used Santa Cruz Organic)

-Vegan ice cream, flavor of your choice (I used So Delicious Neopolitan)

-Cashews for topping (optional)

 

Directions:

-Place spoonfulls of cookie dough onto wax paper on a baking sheet

-Top each cookie dough ball with a dollop of ice cream

-Pour chocolate syrup over each cookie dough ball

-Crush up cashews and sprinkle on top (or use another topping like regular vegan sprinkles)

-Place in freezer for about 45 minutes or until chocolate syrup is solid

-Enjoy!
