Ingredients: 1⁄2 red capsicum (pepper), cut in half 1⁄2 green capsicum (pepper), cut in half 1⁄2 eggplant (aubergine), salted and sliced 1⁄2 sweet potato, sliced 6 field mushrooms, sliced 1⁄4 pumpkin, sliced 2 zucchinis (courgette), sliced 2 cups couscous 1⁄4 cup lemon juice / rind 1 3⁄4 cup water 1 tablespoon soy margarine 1 garlic clove, crushed 2 tablespoons vinegar 2 tablespoons olive oil Handful of chopped parsley, basil and dill Cracked black pepper Extra virgin olive oil Method: Brush all vegetables with extra virgin olive oil and grill each lot separately until cooked, remember to turn onto the other side Place capsicum in a plastic bag to help remove the skin, leave for 5-10 minutes and peel off skins Let all vegetables cool, then dice the vegetables coarsely In a saucepan, boil water and lemon juice Remove from heat and stir in the couscous with a [&#8230;]</p>

Ingredients: 500g pumpkin gnocchi 6 cloves of garlic, crushed 1 eggplant, diced 8 okra, sliced thickly 1/4 bunch spinach, coarsely chopped 1/2 pack of firm tofu (approx 190gr) 5 tomatoes, diced Extra virgin olive oil Method: In a heated wok, add enough olive oil to cover the bottom, sauté the garlic cloves Add eggplant, okra and stir-fry until tender Then add spinach, tofu and tomatoes, mix Cook gnocchi in a large saucepan half-filled with water until most of the pieces float to the surface Rinse gnocchi and add into vegetable mixture on the wok Serves 2 people Serve with a big piece of grained garlic bread Serve with parsley to get rid of the garlic odor.</p>

Ingredients: 4 small-medium zucchini squash (yellow or green), sliced 1 red capsicum (bell pepper), thinly sliced lengthwise 1 bunch of asparagus, cut in half lengthwise 1 bunch of greens (eg. chard, broccoli, or bok choy) 1/2 pumpkin, grated 2 cups rice milk 1 cinnamon quill 1/2 cup slivered almonds Method: Combine pumpkin, rice milk, and cinnamon quill, and boil until cooked Add slivered almonds and set aside Steam cook or boil zucchini squash, bell pepper, asparagus, and greens separately When cooked place vegetable straight onto separate serving plates, layering each vegetable Heat up pumpkin and almond sauce if needed Spoon on top of vegetable Serve immediately Serve as a side dish or main meal with a grain (like quinoa, couscous, millet, or rice) Serves 4-6 people</p>

This week&#8217;s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach. Ingredients: 2 zucchini (courgette), diced 2 carrots, diced 1 red capsicum (pepper), sliced 3 yellow squash, diced 1 bunch bok choy 1 handful snow peas 400 gram chickpeas, cooked 400 gram coconut milk 1 red chili, chopped finely 1 tablespoon tumeric ½ teaspoon each: nutmeg, fennel, coriander, fenugreek, cumin, cardamom, clove, cinnamon, ginger, and black pepper Method: Combine zucchini, carrots, capsicum and squash in wok or saucepan Add the herbs, chili and coconut milk Cook until soft Add the bok choy, snow peas, and chickpeas Combine well Serves 3-4 people Serve with brown rice</p>

Ingredients: 1 zucchini (courgette), sliced with vegetable peeler 1 carrot, sliced with vegetable peeler Spinach leaves 1 ½ cup macadamia nuts, processed or cut up finely a handful of parsley, coarsely chopped a handful of coriander, coarsely chopped Sauce: 2 tomatoes 1 ½ avocados 8 dates, soaked 2 lemons Mince: 1 red capsicum (pepper), sliced 10 mushrooms, sliced 2 celery stalks, chopped ¼ cup raisins/sultanas Method: Using a food processor, process the sauce mix and set aside for later use Process the mince mix, setting aside for later In a square baking dish, layer the zucchini slices on the bottom Spread half of the sauce mix on top, setting the remainder aside Sprinkle the carrot on top of the sauce, then the mince mixture Sprinkle the spinach leaves on top of the mince mixture, then the remaining zucchini Spread the remaining sauce mixture on top of the [&#8230;]</p>
