Walnut Almond Chocolate Chia Pudding
Chia Gel:
3 tablespoon chia seeds
3/4 cup drinking water
Pudding:
3/4 cup chia gel
3/4 cup raw mixed almonds and walnuts
2 1/2 tablespoon cacao powder
pinch sea salt
1 tablespoon cacao nibs
3 tablespoon grade B maple syrup (or another liquid sweetener)
optional: Medicine Flower Extracts, 2 drops each of Morello Cherry and Dark Chocolate
Soak chia seeds overnight to make the chia gel; or you could skip the soaking and just mix chia and water in blender.
Blend soaked chia and use as is, or refrigerate until ready to use. This can be added to smoothies.
In the blender, mix 1 cup nuts with chia gel.
Add cacao powder and a pinch of sea salt.
Add cacao nibs.
Add optional drops Medicine Flower Morello Cherry extract and drops Medicine Flower Dark Chocolate extract.
Add maple syrup or your choice of sweetener.
Blend until creamy, adding water or almond milk to thin as needed.
Pour mixture into goblets, and refrigerate several hours.
Garnish with chopped walnuts and/or cacao nibs.

March 18, 2013 at 6:50 amI have never tried making raw pudding before… it looks delish ๐ and chia seeds are so healthy! My mum made a raw fruit cake for my dad’s birthday a few days ago though.. using watermelons, blueberries, kiwis and strawberries ๐
