Meatless Mondays: Millet Pie

Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. This week’s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach.

 

Ingredients & Method:

 3/4 cup cooked millet

3/4 cup cooked brown rice

1/3 cup water

pinch of salt

pinch of ground black pepper

Mix together all the above ingredients

Press into a pie dish

1 carrot, shredded

1 zucchini (courgette)

1/4 small pumpkin, cut

2 celery stalks

300 gram silken tofu

Process the remaining ingredients until combined well

Pour on top of the pie base

Cook at 200°C (390°F) for 30 minutes

Garnish with fresh herbs like chives or parsley

Serves 4-6 people
