Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. Mediterranean Pizza
Ingredients:
1 pizza base
2 tomatoes, diced
¼ cup of basil leaves, oregano and other herbs
⅛ cup sesame seeds
Kingland soy cream cheese (or Tofutti)
Cracked black pepper
Method:
Mix tomatoes, herbs and sesame seeds together in bowl, drain off juice if any
Spread cream cheese on base of pizza
Sprinkle black pepper on top and other herbs if needed
Spread tomato mix onto the pizza
Cook in oven at 200°C for approximately 15 minutes
Serves 1-2 people
Satay Pizza
Ingredients:
1 pizza base
3 tblsp Kingland soy mayonnaise
3 tbslp satay sauce
½ zucchini (courgette), thinly sliced
½ red capsicum (pepper), thinly sliced
½ avocado, diced
Method:
Mix mayonnaise and satay sauces together
Spread sauces onto pizza base
Add zucchini, capsicum and avocado on top of pizza in decorative manner
Cook in oven at 200°C for approximately 15 minutes
Serves 1-2 people
Spinach and Pine Nut Pizza
Ingredients:
1 pizza base
2 cups Spinach leaves (or silverbeet, kale, bok choy) shredded
1 cup nutritional yeast cheese sauce – see my recipe
½ cup pine nuts
Method:
Combine all ingredients together in a bowl
Spread on top of pizza base
Cook in oven at 200°C for approximately 15 minutes
Serves 1-2 people
