Here’s another Meatless Monday recipe to tantalize your taste buds and get you creating this cruelty-free meal in your kitchen. This week’s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach.
Ingredients:
4 zucchinis (courgettes) peeled, mandolined or spiralised
4 tomatoes, diced
1 red capsicum (pepper), thinly sliced
1 carrot, grated
4 dates, soaked
1 lemon, peeled
bunch of coriander, chopped
Method:
Spiralise, mandoline or peel zucchini to create the pasta
Blend tomatoes, dates, lemon and coriander together in food processor
Combine zucchini, carrot and red capsicum in bowl
Add the liquid mixture to the vegetables and combine
Serves 4-6 people
