This is a great hummus to bring to parties around the holidays, because of its festive cool green color, and good taste. I like to pair it with a crunchy veggie (like sliced cucumbers) and a spicy cracker (like Mary’s Gone Crackers – Hot and Spicy Jalapeno flavor). The spiciness of the cracker pairs very nicely with the coolness of the hummus.
Ingredients:
1 15 oz. can of Garbanzo beans (rinsed and drained)
2 T. tahini
1/2 t. cumin
1 clove of garlic, minced
1/2 cup (or more) fresh cilantro (chopped)
1 T. extra virgin olive oil
1/4 cup raw pumpkin seeds
1/4 cup water
1 – 2 Garlic Cashew Cheese
Directions:
Combine all ingredients in a blender or food processor, and blend until creamy. Keep refrigerated until ready to use.
