Vegan Key Lime Pie

Vegan Key Lime PieIn this Key Lime Pie recipe, the lime juice will prevent the delicious Haas avocado from browning, but chances are the pie will be gone before you have that problem!
 
 
 
 
 
 
 
 
 
You will need:
-Food Processor
-Pie Plate
-Vitamix or another high speed blender
 
Ingredients for crust:
-10 organic Medjool dates (remove pits)
-1 cup raw organic walnuts
-¾ cup raw organic almonds
-Pinch of Celtic sea salt
 
Directions for crust:
For crust, use your food processor with the “S” blade and pulse until it looks like mince or charoset (not cream or butter…leave some texture). Press this into your pie plate.
 
Ingredients for pie filling:
-¾ cup organic fresh squeezed lime juice
-1.5 cup organic haas avocados
-½ cup organic agave (get a really good quality agave!)
-½ teaspoon organic no alcohol vanilla (or vanilla bean!)
-½ cup raw organic coconut oil
-2 tablespoons pure soy lecithin (if it’s not pure soy lecithin it’s not vegan!)
 
Directions for pie filling:
1. Put the coconut oil and lecithin aside. Use your high speed blender and blend everything but the coconut oil and lecithin.

2. Blend first 4 ingredients until creamy. Then add the coconut oil and lecithin and blend again until creamy.

3. Pour your blender contents into your pie plate/pie crust and fill your pie. Chill for 6-8 hours until firm.

4. Before serving, garnish/decorate with fruit, berries, lime slices, almonds or all of the above!
