The Best Kale Salad Recipe

Today I’m sharing with you one of my favorite salads that I make at least once a week. This is a fast recipe with only five ingredients! It takes ten minutes to prepare start to finish, and much faster when you get the hang of it and make it often. The photograph may not be as chic as the other recipes on my site, but it is seriously the best kale salad you’ll ever have!

This salad is raw, vegan, gluten-free, and insanely flavorful for being made of all produce. Since you massage the dressing into the kale, it wilts and there is not a strong “kaley” taste. If you’re an avocado fan and you give this recipe a chance–I promise you’ll be hooked!

Benefits
Kale is a major superfood and is even referred to as the “queen of greens” because of its high nutrition content!
• Kale is very high in iron–per calorie it has more iron than beef.
• Kale has more antioxidants than most greens (which is a lot!). These antioxidants prevent wrinkles and can “slow down” the aging process.

Variations
Feel free to omit the nutritional yeast; your salad will still taste amazing!

Adjust the ingredients until it tastes how you prefer. For instance you can add more salt, less lemon juice, or half an avocado instead of a whole one. I never measure anything when I make this, just taste and make adjustments.

Other veggies make a great addition to this salad! Two that I’ve used before are chopped tomatoes and shredded purple cabbage.

Quinoa is delicious in this salad as well and makes an excellent protein boost! Just steam ahead of time and mix in as much as you’d like after you’ve followed the recipe below.

INGREDIENTS
• 1 head organic curly kale
• 1 medium organic avocado skin and seed removed, flesh only
• 1 large fresh squeezed organic lemon juice
• 1 large organic garlic clove minced
• 2 tsp nutritional yeast optional
• 1/2 tsp Pink Himalayan Salt

INSTRUCTIONS
1. Wash kale and remove the tough stems. Place in a large bowl and tear into smaller bite-sized pieces.

2. Add salt, and massage with your fingers until kale wilts. This takes a minute or two.

3. Add lemon juice, avocado flesh, garlic, and nutritional yeast. Continue to massage with your fingers until all ingredients are well combined throughout the kale.

4. Serve and enjoy!
